We believe that the true craft of curing and smoking means taking local seasonal fish and game and with skill, patience and time create something truly exceptional for your kitchen or plate.  How do we do it? Simple we source the best local game and fish from the Scottish Borders. At our Smokehouse in Yarrow Glen, Selkirk we cut, cure and  hot smoke.
